Ingredients:
- 1 bunch of asparagus, trimmed and chopped
- 2 cups fresh spinach leaves
- 1 medium-sized potato, peeled and diced ( optional )
- 2 cubes of vegetable stock
- 1/2 medium onion, chopped
- 1/2 cucumber (optional), chopped
- 1 tablespoon olive oil
- 1 teaspoon honey (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the vegetable stock cubes and a drizzle of honey (if using). Stir until the cubes are dissolved.
- Toss in the chopped asparagus and diced potato. Cook for about 5 minutes, allowing the vegetables to slightly soften.
- Pour enough water to cover the vegetables and bring it to a gentle boil. Reduce the heat, cover, and let it simmer for about 20-25 minutes, or until the vegetables are tender.
- While the soup is simmering, prepare a separate pot of hot water. Blanch the spinach leaves for just a few seconds, then quickly transfer them into a bowl of ice water to stop the cooking process. Drain well and set aside.
- Once the asparagus and potatoes are fully cooked, add the blanched spinach to the pot. Stir gently to combine.
- Remove the pot from heat immediately to preserve the nutrients in the spinach.
- If you’re adding cucumber, do so now for a refreshing crunch.
- Allow the soup to cool down, then pour into a blender and blend until smooth.
- Taste and adjust the seasoning if needed.
- Serve hot, garnished with a few fresh spinach leaves or cucumber slices if desired.
Storage:
Pour the soup into a tight glass jar with a lid and refrigerate for up to a few days.
